The Farm at Doe Run Aged Seven Sisters

A 1 oz serving of the Farm at Doe Run's Aged Seven Sisters cheese is produced with grass-fed cow’s milk since 2010. Aged in limestone caves, this award-winning cow's milk cheese develops a sweet buttery characteristic reminiscing of a young Gouda style, balanced out by a slight acidity, like you would find in a Cheddar with a lovely touch of herbaceousness from our grass-fed milk. Aged in the caves for 1 year.  This turns the young Gouda style cheese into a more mature cheese with deeper notes of fruit flavors with crunchy protein crystals.
